Hickory Smoked Baby Back Ribs

Ingredients

  • 7 lbs – Pork Back Ribs – membrane removed
  • 2 cups – Hickory Wood Chips – soaked in water
  • 1 cup – Apple Cider
  • 1 cup – Dark Brown Sugar
  • 1/2 cup – Molasses
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  2. Add hickory chips to smoker box, open smoker vent, allow temperature to drop to 110°F (225°F)
  3. Rub spice mixture evenly over both sides of the ribs, season with salt and pepper
  4. Smoke for 50-60 minutes, the meat will begin to shrink from the bones
  5. On a sheet of aluminum foil prepare a bed on brown sugar, drizzled with molasses
  6. Place ribs flesh side down adding apple cider, tightly wrap foil and return to the oven
  7. Return the oven to 175°C (350°F) cook until tender, approximately 2 hours
  8. Remove ribs from oven, allow to rest for 20-30 minutes
  9. Uncover and serve with sauce developed in the foil

Dry Spice Rub

Ingredients

  • 2 Tbsp – Ground Cumin
  • 2 Tbsp – Ground Paprika
  • 2 Tbsp – Ground Coriander
  • 2 Tbsp – Ground Garlic
  • 2 Tbsp – Ground Onion
  • 2 Tbsp – Ground Chili Pepper
