Baked Seafood Paella

Baked Seafood Paella

Yields  8-10 servings


  • 12 pc – Fresh Mussels – cleaned and beards removed
  • 6 pcs -Fresh Squid – cleaned and slices
  • 6 pcs -Fresh Clams – cleaned
  • 6 pcs – Fresh Shrimp – peeled and de-veined, tail remaining
  • 2 cups – Bomba or Long Grain Rice
  • 4 cup – Fish or Chicken Stock
  • 6 pc – Tomatoes – peeled, seeded and fine dice
  • 1 pc – Yellow Onion – peeled and fine shred
  • 6 pc – Garlic Cloves – peeled and fine shred
  • 1 pc – Lemon Zest and Juice
  • pinch – Saffron Threads
  • 3 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste


  1. Preheat outdoor wood oven for 45 minutes before use to 230°C (450°F)
  2. In a paella pan set over medium-low heat, toast the saffron until fragrant, 30 seconds, add olive oil
  3. Add olive oil and onion, sauté until golden brown, add tomatoes and garlic, season with salt and pepper
  4. Add rice to the pan folding to combine, spread the rice evenly in the pan, add stock
  5. Cook for 10-15 minutes until rice is almost finished
  6. Arrange the mussels, squid, clams and shrimp in pan, pressing into rice, season with salt and pepper
  7. Finish with lemon zest and juice, serving with lemon wedges
