Corned Beef Hash with Baked Eggs

Ingredients

  • 500 g – Corned Beef – sliced or cubed
  • 6 pc – Whole Eggs
  • 1 pc – Yellow Onion – peeled and diced
  • 1 cup – Corn Kernels
  • 3 pc – Fresh Thyme – leaves stripped
  • 3 pc – Fresh Flat Leaf Parsley – leaves stripped and fine slice
  • 2 pc – Cloves – peeled and diced
  • 6 pc – Fingerling or New Red Potato – medium dice
  • 2 Tbsp – Unsalted Butter
  • 2 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat barbecue to 175°C (350°F), clean grill with wire brush then season with vegetable oil
  2. Heat the butter an olive oil In a 12-inch cast iron skillet
  3. Add the potato, onion, garlic, thyme and parsley, stirring occasionally, sauté golden-brown on all sides
  4. Add corned beef and corn, toss to mix, sauté for 2-3 minutes
  5. Crack eggs into the hash keeping separate to serve individual portions, season with salt and pepper
  6. Bake until desired doneness
