Herb Crusted Beef Tenderloin

Yields 8-10 servings


  • 1 pc – Whole Beef Tenderloin – 6-8oz per guest
  • 1/2 cup – Shallots – fine slice
  • 4 pc – Garlic Cloves – fine chop
  • 1 cup – Fresh Thyme– fine chop
  • 1 cup – Fresh Rosemary – fine chop
  • 2 cups – Fresh Flat Leaf Parsley – fine chop
  • 1 pc – Red Chili Pepper – fine slice
  • 1/2 cup – Whole Grain Mustard
  • 1/2 cup – Extra Virgin Olive Oil
  • Flaked Sea Himalayan Salt – to taste
  • Fresh Ground Black Pepper – to taste


  1. Preheat barbecue to 200°C (400°F), clean grill with wire brush then season with vegetable oil
  2. Trim beef removing silver skin, prepare uniform size, season with salt and pepper
  3. Combine shallots, garlic, thyme, rosemary, parsley, chili pepper, mustard, olive oil
  4. Thoroughly cover beef with herb crust, place on roasting pan on rack, roast for 45-50 minutes
  5. Check doneness by inserting a temperature probe into center of thickest part of beef
  6. When probe temperature reads 140°F remove from oven, transfer to cutting board
  7. Tent with aluminum foil, rest for 10 minutes, reserve any juices
  8. Portion beef in single 2” slices or multiple 1” slices
