Grilled Halibut with Mango Pineapple Salsa

Ingredients

  • 4 pc – Halibut Fillets – cleaned and prepared, pat dry with paper towel
  • 2 cups – Pineapple – peeled and fine dice
  • 2 cups – Mango – peeled and fine dice
  • 1 pc – Red Bell Pepper – seeded and fine dice
  • 1/4 cups – Red Onion – peeled and fine dice
  • Chili Pepper – seeded and fine diced
  • 1 cups – Fresh Cilantro – rinse and fine chop
  • 2 pc – Lime or Lemon Zest and Juice
  • 2 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat barbecue to 175°C (350°F), clean grill with wire brush then season with vegetable oil
  2. Brush halibut with oil, season with salt and pepper, grill for 2-3 minutes, turn until desired doneness
  3. Combine pineapple, mango, bell pepper, onion, chili pepper, cilantro, lemon zest and juice
  4. Season with salt and pepper to finish, serve halibut topped with salsa
