Grilled Summer Vegetables

Ingredients

  • 2 pc – Italian Eggplant – rinsed and sliced
  • 2 pc – Japanese Eggplant – rinsed and sliced
  • 2 pc – Green Zucchini – rinsed and sliced
  • 1 pc – Red Onion – peeled and quartered
  • 1 pc – Italian Eggplant – rinsed and sliced
  • 1 pc – Red Bell Pepper – rinsed and quartered
  • 1 pc – Yellow Bell Pepper – rinsed and quartered
  • 1 pc – Orange Bell Pepper – rinsed and quartered
  • 8 pc – Shiitake or Cremini Mushrooms – cleaned and stemmed
  • 4 Tbsp Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat barbecue to 175°C (350°F), clean grill with wire brush then season with vegetable oil
  2. Arrange vegetables on stainless steel or bamboo skewers soak bamboo skewers in water before use
  3. Drizzle with olive oil, season with salt and pepper, grill until tender and nicely browned
