Grilled Sirloin Hamburger with Caramelized Onions

Yields 6- 8 servings

Ingredients

  • 3 lbs – Medium Ground Sirloin Beef or Chuck Roast
  • Shallots – peeled and fine dice
  • 3 pc – Fresh Thyme – stemmed and leaves pulled
  • 3 Tbsp – Whole Grain Mustard
  • 3 Tbsp – Extra Virgin Olive Oils
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat barbecue to 175°C (350°F), clean grill with wire brush then season with vegetable oil
  2. Combine beef, shallots, thyme, mustard and olive oil evenly, gently bring together hamburgers
  3. Season with salt and pepper, place on grill for 2 minutes, turn for and additional 2 minutes
  4. Grill until desired doneness, top with caramelized onions, rest for 2 minutes, serve

Carmelized Onions

Ingredients

  • 2 pc – Yellow Onion – peeled and sliced into rings
  • 2 Tbsp – Unsalted Butter
  • 2 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Heat butter until golden brown, add olive oil, onion, season with salt and pepper
  2. Sauté onions until golden brown, turning regularly, deglaze pan with a little water
