Portabello Mushroom with Spinach Stuffing

Ingredients

  • 4 pc – Portobello Mushrooms – stemmed and ribs removed
  • 2 pc – Shallots – peeled and fine slice
  • 4 cups – Fresh Spinach – finely chopped
  • 4pc – Thyme – stemmed and pulled leaves
  • 1 cups – Bread Crumbs
  • 150 g – Cream Cheese  – softened
  • 75 g- Parmigiano Reggiano Cheese- grated
  • 4 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat outdoor wood oven for 45 minutes before use to 230°C (450°F)
  2. Combine shallots, spinach, thyme, breadcrumbs, cream cheese and olive oil in a small bowl
  3. Arrange mushrooms in roasting pan, season the mushroom cavity with salt and pepper
  4. Stuff mushroom cavity with mixture, top with cheese until overflowing
  5. Bake for 10-12 minutes or until the crumbs are golden-brown
