Roasted Fruits with Vanilla Ice Cream

Yields  8 servings

Ingredients

  • 2 pc – D’Anjou Pears – cored and sliced into 8ths
  • 2 pc – Blue Plums – pitted and sliced
  • 2 pc – Gala Apples – cored and sliced into 8ths
  • 2 pc – Peaches – pitted and sliced into 
  • 2 cup – Green Grapes – rinsed
  • 2 cup – Blackberries – rinsed
  • 1 pc – Orange Zest and Juice
  • 1 pc – Lemon Zest and Juice
  • 1 pc – Fresh Rosemary – leaves stripped and fine chop
  • 2 pc – Bay Leaves
  • 1 pc – Vanilla Pod – split and seeded
  • 3 Tbsp – Raw Sugar
  • 3 Tbsp – Cointreau optional
  • Flaked Sea Salt – optional to taste

Technique

  1. Preheat barbecue to 175°C (350°F), clean grill with wire brush
  2. Combine pears, plums, apples, peaches, grapes and blackberries
  3. Toss fruit with orange and lemon zest, rosemary, bay leaves and vanilla seeds and pod
  4. Add slices of orange and lemon with raw sugar to finish
  5. Roast for 25-30 minutes or until fruit is tender but still firm to hold it’s shape
  6. Remove bay leaves and vanilla pod to serve
