Roasted Pear and Apple Crostata

Yields 8 servings

Ingredients

  • 3 pc – McIntosh or Empire Apples – core and slice into 8ths
  • 3 pc – D’Anjou Pear – core and slice into 8ths
  • 1 pc – Orange Zest and Juice
  • 1/4 c – Unbleached White Flour
  • 1/4 c – White Granulated Sugar
  • 1/2 Tsp – Ground Cinnamon
  • 1/4 Tsp – Ground Allspice
  • 4 Tbsp – Unsalted Butter
  • 3 Tbsp – Raw Sugar

Technique

  1. Preheat outdoor wood oven for 45 minutes before use to 230°C (450°F)
  2. Combine flour, sugar, cinnamon, allspice and salt, cut into the butter and pulse until crumbly
  3. Roll out the pastry into a 12” round on a floured work surface
  4. Combine apple and pear slices with orange zest and juice
  5. Cover the sweet dough with the mixture leaving a 2” border, top with spiced mixture
  6. Gently fold the edges of the dough over the filling, top with raw sugar
  7. Bake for 25-30 minutes or until the crust is golden and the apples and pears tender and caramelized
  8. Cool slightly, serve warm with vanilla ice cream

Sweet Dough

Ingredients

  • 3 c – Unbleached All Purpose Flour
  • 12 Tbsp – Unsalted Butter – cubed and frozen
  • 1/3 c – Vegetable Shortening – cubed and frozen
  • 1/4 c – White Granular Sugar
  • Fine Sea Salt – pinch
  • Ice Water – as needed

Technique

  1. Combine flour, butter, shortening, sugar and salt in a food processor, pulse until sand texture
  2. Slowly incorporate ice water, very slowly, adding until dough comes together
  3. Turn the dough onto a floured work surface and form into a disk
  4. Wrap in plastic wrap, pressing flat, refrigerate for 1 hour minimum
