Summer Fruit Cobbler

Yields  6-8 servings

Ingredients

  • 3 pc – Peaches – pitted and sliced
  • 3 pc – Blue Plums – pitted and sliced
  • 1 cup – Blackberries – rinsed
  • 1 pc – Lemon Zest
  • 3 Tbsp – Raw Sugar
  • 1 cup – Unbleached All-purpose flour
  • 1 cup – White Granulated Sugar
  • 2 Tsp – Baking Powder
  • 1 Tsp – Fine Sea Salt
  • 8 Tbsp – Unsalted Butter – melted
  • 1 cup – Buttermilk

Technique

  1. Position a rack in the center of the outdoor wood oven before heating
  2. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  3. Combine flour, sugar, salt and baking powder whisking to combine, add buttermilk
  4. Pour mixture into baking dish or ovenproof skillet, top with melted butter
  5. Arrange the fruit over the batter evenly, pressing into batter, top with lemon zest and raw sugar
  6. Bake for 30-45 minutes or until golden brown
  7. Insert a wooden skewer into cobbler if it comes out clean the batter is fully cooked
  8. Cool slightly, serve warm with vanilla ice cream
