Barbecued Brick Chicken

Yields  2-4 servings


  • 3 pc -Whole Free-Range Chicken – split in half, remove back bone
  • 5 pc – Garlic Cloves – peeled and sliced
  • 3 pc – Fresh Thyme – stemmed and leaves pulled
  • 3 pc – Fresh Rosemary – strip leaves and rough chop
  • 1 Tbsp – Ground Chili Pepper
  • 3 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste


  1. Preheat outdoor wood oven for 45 minutes before use to 230°C (450°F)
  2. Heat cast iron pans, season lightly with vegetable oil
  3. Rinse chicken in cold water, pat dry with paper towel, drizzle with olive oil, season with salt and pepper
  4. Season liberally with chilli pepper and paprika, thyme and rosemary, top with garlic
  5. Place the chicken halves, skin side down, in the pan, season with salt and pepper,
  6. Pace second pan on top (if you don’t have cast iron skillets wrap two bricks in a couple of layers of foil)
  7. Cook until the skin is golden brown and the internal temperature is 165°F
