Lamb Kebabs with Green Olive Sauce
Ingredients
- 500 g – Lamb Shoulder – trimmed and cubed
- 8 pc – Bamboo Skewers – soaked in water
- 2 pc – Shallots – peeled and fine slice
- 1/2 c – Black Olives – pitted and rough chop
- 1 pc – Green Zucchini – sliced
- 1 pc – Lemon Zest and Juice
- 2 Tbsp – Sesame Oil
- Flaked Sea Salt – to taste
- Fresh Ground Black Pepper – to taste
Technique
- Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
- Thread lamb and zucchini on skewers, place on a shallow plate, toss to coat
- Cover with olives, rosemary, olive oil and lemon zest and juice, season with salt and pepper
- Marinate for 30 minutes, roast for 10-15 minutes or until desired doneness
- Transfer the skewers to serving dish, spoon over sauce, serve immediately
Green Olive Sauce
Ingredients
- 1/2 c – Green Olives – pitted and fine chop
- 2 pc – Garlic Cloves – peeled and finely grated
- 2 Tsp – Ground Cumin
- 1 Tbsp – Red Chili Pepper Flakes
- 1 Tbsp – Clover Honey
- 4 Tbsp – Extra Virgin Olive Oil
- Flaked Sea Salt – to taste
- Fresh Ground Black Pepper – to taste
Technique
- Combine olives, garlic, cumin, chili flakes, honey and olive oil, season with salt and pepper
