Macaroni & Cheese

Yields  4 servings

Ingredients

  • 500 g – Aged Cheddar – shredded
  • 1 L – 2% Milk
  • 1 Tbsp – Dijon Mustard
  • 1 Tsp – Fresh Ground Nutmeg
  • 75 g – Unsalted Butter
  • 75 g – Unbleached All Purpose Flour
  • 250 g – Bow-Tie Noodles
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  2. Cook noodles in boiling, salted water until just tender, strain and fill casserole dish (reserve some cooking liquid)
  3. Add butter to a saucepan over medium-high heat until lightly browned
  4. Whisk flour and nutmeg, continue to cook for 2 minutes
  5. Combine mustard and milk, continue to heat without boiling
  6. Fold in cheese whisking until smooth, season with salt and pepper
  7. Pour cheese mixture over noodles, turning to coat (use some cooking liquid if necessary)
  8. Bake on wood oven rack for 50-60 minutes
