Teriyaki Shrimp Skewers

Teriyaki Shrimp Skewers

Yields 4 servings


  • 24 pc – Raw Shrimp – peeled and de-veined 2125
  • 1 pc – Pineapple – peeled and cubed
  • 4pc – Spring Onions – fine slice
  • 6 Tbsp – Soy Sauce
  • 3 Tbsp – Dark Brown Sugar
  • 1 Tbsp– Fresh Ginger – peeled and grated
  • 2 pc- Garlic Cloves – peeled and grated
  • 1 Tbsp – Sesame Oil
  • 8 pc – Bamboo Skewers – soaked in water


  1. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  2. Combine soy sauce, brown sugar, ginger, garlic, sesame, spring onions and cilantro
  3. Press the pineapple and shrimp onto skewers alternating as you build
  4. Pass the skewer through both ends of the shrimp to keep them firmly in place
  5. Arrange the skewers in a shallow dish, pour mixture over top, cover with plastic wrap
  6. Marinate for 30 minutes, refrigerate
  7. Place the skewers on the rack for 4-5 minutes or until shrimp turn bright pink and golden
  8. Bring the marinade to a boil over medium-high heat in a small saucepan
  9. Brush skewers with reduction to finish
