Tomatoes Provençal

Yields 8 servings

Ingredients

  • 8 pc – Roma Tomatoes
  • 4 pc – Garlic Cloves – peeled and finely chopped
  • 2pc – Fresh Flat Leaf Parsley – finely chopped
  • 2pc – Fresh Basil – finely chopped
  • 2pc – Thyme – stemmed and pulled leaves
  • 2 cups – Bread Crumbs
  • 75 g- Parmesan or Gruyere Cheese – grated
  • 4 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  2. Slice ¼ off the top of tomatoes, remove the seeds from the cores, reserve the tops
  3. Place the tomatoes in a baking dish (if they don’t stand upright slice a bit from the bottom)
  4. Combine garlic, parsley, basil, thyme, olive oil and bread crumbs
  5. Season tomato with salt and pepper, spoon bread crumb filling into cavities until overflowing
  6. Gently press the filling, shred cheese over filling, top with reserved tomato tops, drizzle with olive oil
  7. Roast for 15-20 minutes or until tender and golden brown, serve warm

Roasted Garlic

Ingredients

  • 1 pc – Garlic Bulb
  • 3 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste

Technique

  1. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  2. Slice ¼ off the top of the garlic bulb, place bulb in roasting dish, drizzle with olive oil
  3. Season with salt and pepper, roast for 45 minutes or until cloves burst, tender and golden brown
