Rotisserie Honey Roasted Lemon-Thyme Chicken

Yields 2-4 servings


  • 1 pc – Whole Chicken – rinsed and pat dry with paper towel
  • 1 pc – Lemon Zest and Juice
  • 2 pc – Fresh Thyme – leaves stripped
  • 3 Tbsp – Clover Honey
  • 3 Tbsp – Extra Virgin Olive Oil
  • Flaked Sea Salt– to taste
  • Fresh Ground Black Pepper – to taste


  1. Assemble rotisserie and test before starting barbecue
  2. Preheat barbecue to 175°C (350°F), clean grill with wire brush then season with vegetable oil
  3. Season the chicken cavity with salt and pepper, zest lemon on the outer skin
  4. Slice lemon in half inserting in the cavity with some thyme leaves
  5. Place the chicken on the rotisserie, drizzle with olive oil, add balance of thyme to the outside
  6. Season with salt and pepper, roast for 45 minutes, open cover and drizzle with honey
  7. Check doneness with probe thermometer 75°C (165°F)
