Texas-Style Beef Brisket

Texas-Style Beef Brisket

Yields  8 servings


  • 3 kg – Beef Brisket – trimmed and excess fat removed
  • 3 Tbsp – Dark Brown Sugar – packed
  • 2 Tbsp – Ground Chili Pepper
  • 2 Tbsp – Ground Paprika
  • 2 Tbsp – Fine Sea Salt
  • 2 Tbsp – Ground Cumin
  • 2 Tbsp – Ground Mustard
  • 2 Tbsp – Cayenne Pepper
  • 2 cups – Hickory Wood Chips – soaked in water
  • Flaked Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste


  1. Combine brown sugar, chilli pepper, paprika, cumin, mustard and cayenne thoroughly
  2. Rub the mixture onto brisket, wrap tightly in plastic wrap, refrigerate overnight
  3. Preheat outdoor wood oven for 45 minutes before use to 175°C (350°F)
  4. Add hickory chips to smoker box, open smoker vent, allow temperature to drop to 110°F (225°F)
  5. Remove beef from wrap, pat dry, season with salt and pepper
  6. Smoke the beef to an internal temperature of 150°F, approximately 4 to 5 hours
  7. Return the oven to 175°C (350°F) cook to an internal temperature of 185°F, tender and pulling apart
  8. Remove from the oven, cover with aluminum foil and rest for 20-30 minutes
